Acerola Cherry Squash

    Ingredients
    • 500gm acerola cherries(fully ripe)
    • 500gm sugar
    • 250ml water
    Instructions
    To prepare:
    1. Put the cherries into your food processor and grind to fine paste.
    2. Sieve the paste into a vessel using a close meshed stainless steel sieve, rubbing it with your fingers.
    3. Pour the water over the pomace (cherry solids) and sieve it once more to extract all the remaining juice.
    To cook:
    1. Set the vessel containing the juice on high heat. Tip in the sugar and stir continuously.
    2. As soon as it comes to a boil, turn down the heat and cook for 10 minutes, taking care to stir continuously.
    3. Switch off the heat and let cool naturally.
    4. When cool, transfer to a clean, dry, airtight bottle and store in your refrigerator.
    To serve:
    1. To make a 300 ml. glass of cherry squash, just pour 50 ml. of concentrate and top up with 250 ml. of water or sparkling (carbonated) water (1:5). Stir and enjoy! You will love this drink!
