Ingredients
  • 200gm pumpkin(peeled, grated, mature)
  • 200gm roasted rava(fine wheat semolina) or roasted raw rice powder (for gluten free diets)
  • 100gm grated coconut
  • 175gm jaggery(unrefined cane sugar)
  • 6pods cardamom
  • 25ml water
  • 8 banana leavesof size 20 cm x 20 cm or 8″ x 8″
Instructions
To prepare:
  1. Put the jaggery together with 25 ml of water in a small pan and set on low heat.
  2. Stir frequently till the jaggery melts fully. Sieve and transfer to a mixing bowl.
  3. Shell the cardamom, crush the seeds to powder and tip it in.
  4. Add the remaining ingredients (pumpkin, rava and coconut) and mix thoroughly with your fingers.
  5. Divide the mixture into 8 portions. Take a portion and spread it in a thick line across the center of a leaf. Press lightly and shape it into a cylinder with your fingers.
  6. Fold one side of the leaf over the mixture and press it lightly to flatten the mixture a bit. Now fold the other side over the first one and put it upside down in your steamer.
  7. Finish the rest of the portions likewise.
To steam:
  1. Steam on high heat for 15 to 20 minutes.
  2. Discard the banana leaf jacket and enjoy!
Recipe Notes
  1. Leftover dudiya kadambe, if any, can be frozen and reheated in the microwave oven.
  2. Dudiya kadambe is so light and filling at the same time that you’ll feel happy and content for longer.
