Ingredients

(fully ripe)

Instructions
To prepare
Chop the tomatoes to pieces and tip them into your food processor.
Chop the ginger to fine bits and tip it in.
Add the garlic cloves and grind to fine paste.
Use a fine-meshed stainless steel sieve to squeeze and strain the juice into a pan.
To cook:
Set the pan with the juice on high heat. Tip in the rest of the ingredients. Stir to mix thoroughly.
Once it comes to a boil, continue to cook on high heat for 45 seconds, taking care to stir continuously. Switch off the heat.
Your delicious, fresh tomato sauce is ready for use. When cool, transfer to an airtight glass jar and enjoy!
Recipe Notes
If you wish to store the sauce for more than a couple of days, do refrigerate.
