Jaggery Cucumber Juice – Scoop and drink! (Vegan + Gluten Free)

Do you feel like having a juice that freshens and energizes you, that cools and detoxifies your system? Do you wish to have a juice that you can enjoy in scoops, munching delicious, sweet grated cucumber in between heavenly nectarine sips? Something light and filling at the same time? Are you looking for a juice that uplifts your spirits and gives you a feeling of contentment? The traditional Konkani jaggery cucumber juice is an apt answer. Mature sambar cucumbers were used in olden days as common cucumbers were not so easily available and as ripe, organic sambar cucumbers could be stored for seven to eight months. Though I use both, I find that mature, common cucumbers are the best. The very fragrance of jaggery cucumber juice is divine. Do make and enjoy!

A delicious Konkani scoop-and-drink grated cucumber juice.

Ingredients
  • 1 kg cucumber (peeled and grated)
  • 250 gm jaggery (unrefined cane sugar of best quality)
  • 2 pods cardamom (crushed, optional for cardamom lovers only)

Ingredients
  • 1 kg cucumber (peeled and grated)
  • 250 gm jaggery (unrefined cane sugar of best quality)
  • 2 pods cardamom (crushed, optional for cardamom lovers only)

Instructions
  1. Pound and crush the jaggery as finely as you can.
  2. Transfer to a mixing bowl. Tip in the grated cucumber and mix thoroughly till the jaggery dissolves fully.
  3. Your delicious jaggery cucumber juice is ready to serve. Enjoy cold or chilled.
Recipe Notes
  1. Traditionally, the Konkani people use cardamom powder in the juice, but everyone in my family loves the natural flavor of the cucumber more. Try out both, with cardamom and without, and let me know!
  2. Passive time given is for grating the cucumber.

    It is also helpful in controlling acid reflux,acidity and heartburn etc.
