Rows of bottles of tomato sauce line the shelves of every supermarket, every grocery shop. It has become such an indispensable part of our lifestyle in recent years. Whether it is french fries, pizza or fried rice, noodles, gobi manchurian or samosas, tomato sauce is a must. Yet, when one goes through the mandatory list of ingredients, one finds so many artificial preservatives, stabilizers, food colors and taste enhancers. Avoidable lifestyle diseases, which were so rare half a century back, have tightened their grip on this generation, especially on children. Seeing their suffering is such a pain for me, as it is for you all. By eating healthy, nutritious food, we can enjoy happier lives. I always make my own sauces for my family. As no preservatives are used, they do not have much shelf-life and need to be refrigerated. However, the flavor and taste of fresh homemade sauce are simply irresistible. Here is my simple tomato sauce recipe. Do make and enjoy!

Tomato Sauce (Vegan + Gluten Free)

- 500 gm tomatoes (fully ripe)
- 5 gm ginger (peeled)
- 10 gm garlic cloves (peeled)
- 10 gm Kashmiri chili powder
- 1 gm garam masala powder
- 1 gm turmeric powder
- 5 gm corn flour
- 100 gm sugar
- 10 gm salt

- Chop the tomatoes to pieces and tip them into your food processor.
- Chop the ginger to fine bits and tip it in.
- Add the garlic cloves and grind to fine paste.
- Use a fine-meshed stainless steel sieve to squeeze and strain the juice into a pan.
- Set the pan with the juice on high heat. Tip in the rest of the ingredients. Stir to mix thoroughly.
- Once it comes to a boil, continue to cook on high heat for 45 seconds, taking care to stir continuously. Switch off the heat.
- Your delicious, fresh tomato sauce is ready for use. When cool, transfer to an airtight glass jar and enjoy!
If you wish to store the sauce for more than a couple of days, do refrigerate.
